Old, poorly made and improperly stored extra virgin olive oil yields fewer, if any, health benefits and undesirable flavor.  Knowing more about the science and flavorful taste of fresh olive oil is fun, adds to your evening meals, and turns an ordinary dinner into a gourmet experience!

Cheesy Garlic Hasselback Potatoes Recipe 

Cheesy Garlic Hasselback Potatoes

Serves 4

Comfort food at its finest

  • 8 medium red new potatoes
  • 1/2 cup Olive Alchemy Garlic olive oil (you could also substitute with any EVOO, herb or chili infused oil)
  • 2 teaspoons kosher salt
  • fresh ground pepper to taste
  • 1 cup grated melting cheese of your choice (preferably cheddar cheese)
  • 1 tablespoon fresh chopped chives for garnish

Preheat the oven to 400 F.

Place each potato on a large spoon and cut thin slices along the length of the potato, the spoon is used as a guide so as not to cut all the way through.

Pour your olive oil into a large bowl or container.  Toss the potatoes with the olive oil. Make sure to get the oil in-between the potato slices.  Arrange your potatoes cut-side up on a foil lined baking sheet.  Sprinkle with salt and pepper to taste, making sure to season in between the slices.

Bake for 30 minutes until the edges begin to turn golden brown.  Remove the potatoes, sprinkle with cheese, and bake for another 15-20 minutes until tender and golden brown.

Add seasoning to taste, sprinkle with chives for garnish, and serve with sour cream if desired.
